This is a staple Levantine breakfast item, and a very distinct Middle Eastern flavor. It is tangy, and the fermentation process concentrates the savory eggplant flavor. The soft eggplants and the slightly crunchy green walnuts are a texture made in heaven especially against the melting soft bread.
Can be had as is with bread or mixed with chopped tomatoes, the contrast is Divine. It is also especially good mixed with labneh.
