Freekeh is green wheat, and it is a traditional Middle Eastern grain used across the board in Lavantine, Egyptian, & Arabic cooking. It has recently become a very famous grain across the world, and is used in Salads, Pilafs and anywhere you would use rice.
The green wheats are usually burnt to remove the husk, which gives it its distinctive smoked flavor. It is earthy, nutty and smoked, a very robust flavor that you will love. Also freekeh stores for a long time, as rice does and so it is a staple pantry product.
